There is a lot going on in the area of shelf-life extension: In the summer, the new EU regulation on the declaration of buffered vinegar was eagerly awaited. Find out what will change.

Acelact – now with a new recipe

Acelact  – our proven product from the shelf-life extender range – is now available with an improved recipe and leaner declaration. The optimized functional ingredient for cooked sausage and convenience products impresses with a noticeable freshness effect, even when stored for a longer period of time. Acelact contains a particularly effective combination of acetate and lactate against spoilage pathogens and Listeria monocytogenes and thus ensures safe sausage and convenience products with a long shelf-life.

New regulation for buffered vinegar

The European Food Safety Authority (EFSA) is amending the Additives Regulation for buffered vinegar. In the future, this will bear the E-number 267. The new regulation provides a clear framework for the use of buffered vinegar. Depending on the function in the product, food manufacturers have two options for adapting the declaration on their labels:

  • Preservative: E 267 / Buffered vinegar
  • Acidity regulator: E 267 / Buffered vinegar

Impact on organic products

Buffered vinegar has so far been used without restriction in organic products. This changes with the new regulation, because so far there are no known efforts to approve the additive for the use in organic food. Organic producers are urged to find alternatives.
