An important goal of the food industry is to produce products that are safe, taste good and have the longest possible shelf life. At the same time, food waste is to be reduced. This is a major challenge, especially with sensitive products.
This is where food cultures come into play: they help to displace unwanted bacteria and pathogenic germs through natural competition. In this way, they help to improve the quality and safety of the products.
Fresh Bioprotection With the power of good bacteria
Fresh Bioprotection typically describes the use of food cultures in non-fermented products. These can naturally protect the food from the growth of pathogens and spoilage pathogens. They promote freshness retention and improve the taste over the duration of the shelf life.
Longer shelf life and freshness for:
- frankfurters
- fresh minced meat products such as salsiccia fresca, merguez, bratwurst, cevapcici
- sliced cooked sausages
- ready-to-eat fish products
- salads such as delicatessen salads or cut salads
- dips and spreads
- side dishes such as pasta and dumplings
- vegan meat analogues
Watch out for listeria!
Resilient & Dangerous
- Listeria are bacteria that occur everywhere in the environment. They can even continue to multiply or at least survive when exposed to refrigerator temperatures, oxygen deficiency or other adverse conditions.
- The bacterial strain Listeria monocytogenes is of particular importance because it can cause the dangerous listeriosis in humans.

Listeria monocytogenes
- are widespread in nature
- do not lead to spoilage and are therefore not detectable by the senses
- are capable of growing or surviving even at low temperatures, high salinity, reduced oxygen content and extreme pH and aW values
- can only be killed by heating (at least 2 min at a core temperature of 70 °C)
- can cause dangerous diseases
Protection against listeria
Fresh Bioprotection can be used in typically fermented products such as salami, raw cured products, cheese or yoghurt to protect against listeria. But even in non-fermented products, it can naturally inhibit the growth of pathogens and spoilage pathogens.
