What do gin and raw ham have in common? That's right, they rely on the seasoning power of juniper! The spice from the north enriches drinks and food alike. Juniper is an indispensable part of meat production, as it gives some classic specialties its characteristic taste.
Evergreen from the North
Juniper is native to the northern hemisphere and is particularly characteristic of heath and mountain landscapes. The undemanding plant belongs to the cypress family. Their evergreen needles are small and spiny.
In the kitchen, the so-called "berries" are used, but botanically they can be seen as cones. It is not until the third year that the small globules ripen and then acquire their characteristic dark colour.
