Boutefas AOP is a traditional speciality from the French-speaking cantons of Vaud and Fribourg. This smoked raw sausage product consists mainly of pork and owes its characteristic appearance to the natural pork casings in which it is filled. This typical product from Switzerland should not be without wine yeast, white wine and the spices pepper, garlic and coriander. The suffix AOP indicates a protected designation of origin for Swiss products and stands for Appellation d'Origine Protégée. The Boutefas AOP is in exclusive company, as a total of only 25 products bear this label, including Gruyère AOP and Emmentaler AOP. Only products that meet the strict requirements of the specifications may bear the AOP quality mark. Raw materials and processing are closely linked to the region of origin. For example, the pigs for the Boutefas are raised in the region with equally regional feed, with particular attention to animal welfare.
